Domaine Baudouin Millet’s Petit Chablis – Les Chaulles 2023 is made from 100% Chardonnay grapes. It boasts a refreshing alcohol content of 12.5% and has less than 1 g/L residual sugar. The wine presents balanced acidity, with a total acidity of 3.21 g/L and a pH of 3.31. Visually, this white wine offers a bright blanc hue. On the nose, it is pleasant and aromatic. The palate reveals a rich, aromatic attack with a well-balanced structure. Medium in weight and length, the flavors are a blend of citrus and floral notes, making it a perfect pairing for aperitifs, oysters, seafood, and grilled fish. It is best served between 10-12°C and can age gracefully for up to three years. The Petit Chablis vineyard spans 9 hectares with vines averaging 35 years of age. It uses traditional vine-growing methods, including double Guyot pruning, and has a planting density of 5,500 plants per hectare. The vineyard, situated on clay-limestone soil, yields around 60 hectoliters per hectare.
